We had already published a recipe for a chocolate ice cream here. But this is not a chocolate ice cream, but an ice cream made of chocolate.
The basis for the creaminess comes from the cashews. The easiest way is to take cashew butter, but alternatively you can also take cashews soaked in water for 8 hours. We chose the Nature 59% as the chocolate, if you like it you can use a darker variety.
So, let's go!
• 100g cashew butter
• 150ml water
• 15g cocoa powder
• 85g Date Chocolate
1. Put the cashew butter, water and cocoa powder in a blender.
2. Melt the chocolate over a water bath.
3. Mix the melted chocolate with the cashew mix in a bowl.
4. Then place in the freezer for 2-3 hours.
Tip: If you don't have an ice cream maker, it is best to take the ice out of the freezer and stir briefly every 20 minutes. This keeps the ice creamy.
If you take the ice cream out of the freezer, it is best to let it stand for another 10 minutes so that it gets a little softer again. Garnish the ice cream with cocoa nibs and / or fresh mint as desired.
